One of the benefits of training for a marathon is that running 40+ miles a week means you can pretty much eat whatever you want - especially on the hardest training days…
I mean naturally I need more energy (food) on a day when I am running 18 miles (this coming Saturday) which translates to about a 3 hour run…. but this past weekend when I ran 16 on Sunday I didn’t *over indulge* because I really didn’t want to cancel out the benefits of the workout… and no matter how much we exercise it still isn’t a great idea to eat a lot of fatty foods… but each week I do have a “guilt free treat” after the run…
Some of my favorites include:
Peanut Butter m&ms; (The kind in the red bag) - The combination of sweet, salty and crunchy is awesome.
Tahitian Blend trail mix that one of our local grocery stores carries a bulk.. it is sooooo good - dried apricots, pineapple, walnuts etc…
Mint Chocolate Chip ice cream with chocolate syrup - possibly one of the best flavor combinations ever.
Now… all of the junk food aside typically I try to make our meals healthy and my snacks at work are good for me but baby carrots can get boring…
One of my co-workers was just telling me about lettuce wraps that you can use for tacos and for fajitas… I know this is not a new concept but I have never tried it and think it actually sounds as tasty as a taco shell or tortilla without the extra calories.
Some other ways I try to make some of my favorite recipes a little healthier include:
Substituting wheat flour for white flour in my favorite white chicken chili recipe and using light sour cream with 2% cheese.. it also calls for salsa but that is already pretty healthy.
I eat fried egg whites without the yolk. At first I felt bad about throwing away the yellow part but not anymore - the whites taste better without it.
I make a great Chicken Feta Pasta with reduced fat feta cheese and wheat noodles
But I feel like I have a very short recipe rotation list… so if you have a great healthy dinner recipe that you love would you mind sharing it with me?
