Not your ordinary chicken sandwich

I’m having a friend over for dinner this weekend to help me learn to scrapbook. I decided to make a nice lunch. I couldn’t get too crazy because for one, I’ll finally be squeezing in time to begin my 20-month-olds first scrapbook. Not to mention, second, I am nine plus months pregnant!! The point is, I wanted to do more than throw ham and cheese on bread and call it lunch.

This Caesar Club Sandwich was just the answer. I saw it on Barefoot Contessa. From the aioli used as a dressing, to the peppery arugula and sundried tomatoes, this easy to make concoction was extraordinary. I did a trial and made them for my husband this weekend. I’ll make it this weekend for sure, and definitely for my family again.

I followed the recipe with one exception. Instead of roasting the chicken in the oven, I grilled boneless skinless breasts. I had them in the freezer, not to mention it was a lot cooler to cook them outside and clean-up was even more of a snap!!
