I wasn’t sure how I would like it, but it did not disappoint.
I made a butternut squash soup last winter and it was good. I tried using the fruit (yes, I read someone it was a fruit) in a pasta dish yesterday and it was GREAT!!! I could have eaten the sauce right out of the pan, before I even made the pasta and shrimp to go with it. Looking at it, it can be a little intimidating but it is really easy to use, especially if you roast it.
Yesterday, I sautéed it in a pan with garlic and vegetable broth until it was tender. Even if you think you’re not a fan of butternut squash, try it, you will become one!! Plus, it’s good for you, lot of good vitamins!!
