Don’t try this at home: One dish chicken

It’s hard enough getting a home cooked dinner on the table when your single, but when you’re trying to get it done after work while simultaneously trying to keep yourself and two little ones on schedule, it’s ever more challenging. Needless to say when I came across what looked like a simple solution—and tasty looking solution too—to one meal a week, I was thrilled. Until I tried it.

I tried a “One Dish Casserole Seasoning Mix” for last night’s dinner. It was simple, and quick to make—just put rice, mushrooms, (I used fresh instead of canned) peas and chicken in a baking dish. Top with the seasoning mix, mixed with milk and water. Bake for 45 minutes.

55 minutes later, I went to take it out of the oven and found baked chicken atop a baking dish of soup!!! I was somewhat certain I followed the simple steps correctly so I called the company. The gentleman was super nice and honest. Let me repeat.. Honest.

He told me he had the same problem using that seasoning. In fact, he said they’ve gotten “lots of complaints about it.” He said it’s good idea but it doesn’t work and actually said it won’t be on the market much longer. Seriously, and it’s still available now? 

I left in in the oven for another 35 minutes until the rice finally cooked. Just in time for the chicken to dry out. So much for looking for a short cut.
